Spiny lobsters

This is a cold water rock lobster caught by trap in the South East Atlantic Ocean.
It is a sustainable fishery, based on a quota system and fishing license. Upon landings, the lobster are weighted, kept for some time in tanks for purging then sorted before being exported by air.
The species are :
Jasus Lalandii, Red lobster, the season is 15 November to 30 September.
Palinurus gilchristi, Pink lobster, the season is all year long, excepted 1 or 2 weeks in October.
