Spiny lobsters

Fresh cooked lobster : Panulirus argus
This warm water lobster is caught in the Carribean Sea by artisanal fishermen from June to January.
Quantity and sizes caught are strictly monitored.
It is caught by small boat with trap and brought alive to the processing factories.
